AOP Entre-Deux-Mers

is a quaffable blend of 61% Sauvignon Blanc, 14% Sémillon, 13% Muscadelle, and 12% Sauvignon Gris. The grapes are harvested at night to protect their aromatic potential and undergo a cold settling. About 15% passes through malo. Aged 6 months in tank on lees. A terrific basic Bdx blanc.

Vineyards: The Château Haut-Meyreau date back to 1802. Over the years, the domain has evolved and expanded to over 90 hectares of vines planted in the Entre-Deux-Mers region. The terroir requires a careful understanding of the soil and the messages it conveys in order to achieve a wine of such quality. Something which has pushed our team of skilled wine growers to orient our practices towards sustainable viticulture, earning us the hugely rewarding ‘High Environmental Value’ label. This wine tells the recent story of Haut-Meyreau, the 3 fingerprints representing the 3 generations who have succeeded each other at the head of the estate: Jean-Claude Bernard, Jean-Pierre Derouet and now Hugues Laborde.

Grape varieties: 61% Sauvignon Blanc, 14% Sémillon, 13% Muscadelle, 12% Sauvignon Gris

Winemaking: Mechanical harvesting was carried out at night in order to protect the aromatic precursors of the grape variety. The grapes were pressed without the addition of sulfites. Cold settling was performed with bio-protective yeasts for 8 hours. Therefore, clarification occurred early, unlike the traditional process which recommends the clearest possible must. We deliberately leave a certain amount of lees in the juice. These provide a support for indigenous yeasts and contain aromatic and structural compounds that contribute to achieving a “vinous” profile—not merely “simple and fruity.”
Fermentation with indigenous yeasts lasted nearly 6 weeks. For this vintage, around 15% of the blend underwent malolactic fermentation. After fermentation in stainless steel tanks, the wine is aged on lees for 4 to 6 months.

Soil type: Limestone from the Périgord and asteriated limestone

Vines: Average vine age : 25 years old, 5000 vines per hectare 

Aging potential: 3 years 

Tasting notes: open 1 hour before serving, enjoy at 11°C

Notes: ripe white fruit (peach), and exotic fruit (pineapple). The palate is generous, smooth attack and fresh, saline finish

Pairing: Gratinated oysters, Landes shallots, Chanterelle mushrooms
