Terroir and Technique
For their Vieilles Vignes bottling, the family utilizes rotary tanks to conduct a cold maceration of the juice with the skins, pre-fermentation, in order to amplify the aromatics.
The vineyards of Château Sainte-Marie cover two hills at higher elevations than is typical for the Bordeaux region, providing ideal sun exposure.
The Vieilles Vignes relies on vines which are on average 80 years old.

Property: The estate of Stéphane Dupuch and family. He took the reins from his father in 1997.
Vineyard: The vineyard utilized for Vieilles Vignes covers nearly 62 acres near the town of Targon on clay-limestone soils. The vines for this wine average 80 years of age across the three varieties. The property is certified organic as of vintage 2024 and enjoys both the Bee Friendly and HVE certifications.
Grape Varieties: 70% Sauvignon Blanc, 25% Semillon and 5% Muscadelle.
Winemaking: The grapes undergo maceration at a low temperature (10 to 15° C/50 to 59° F) before fermentation to intensity the aromatic expression. Then, they are pressed in a pneumatic press for gentle extraction. Fermentation is in stainless steel tanks at a moderately low temperature (15 to 18° C/59 to 64° F). The wine is given brief aging in tank, with stirring of the lees to boost its richness and aromatic complexity. Bottling takes place early in the year after harvest.
The Vieilles Vignes is a wine best enjoyed in the first 2 to 3 years after vintage for its vivacity and highly expressive aromatics.
